Alright I know Cinco de Mayo just passed, and now officially Mother’s Day. I’m slightly behind so I apologize. I did post all the recipes we used for our dinner that night but I thought I would compile them all here. We are currently in quarantine in the middle of no where New York (like literally there is nothing around but woods and farms). We dearly miss being able to go to chipotle but since there isn’t one that’s even within a drive able distance, we made our own chipotle bowls/burritos. Now we do love our American version of Mexican food which is why I posted them as copycat recipes. We do have authentic Mexican recipes as well which will be posted then in the next few months.
So why are we celebrating cinco de Mayo as Americans? Well this is when I take the opportunity as a parent not only to try new foods or recipes but learn about the culture and the history behind the holiday. So here’s a brief history of Cinco de Mayo:
Cinco de Mayo or May 5th, is the celebration of the Battle of Puebla when the Mexican army had victory over Napoleon III’s French Army in 1862. It is celebrated only in Puebla and America, with parades, parties and lots of food.
