Encanto Movie Night
It’s #movienightfriday and we are being transported into Encanto with traditional Colombian food as that is where Encanto is set. We found Columbia on the globe then watched this video to get a real feel of what it is like.
Then we spoke about family trees, or ancestry. We did work a bit on ours and showed how genealogy works. You can find more on that at our ancestry post.
Then we explored gardens through virtual tours. You can also take a field trip to your local botanical gardens.
United States Botanical Gardens Tour
The Birmingham Botanical Garden Tour
There are so many more but those were our favorites. We had so much fun exploring Columbian culture.

Grilled Plantains – Strength and Sunshine

“I can’t win. I really can’t. So my new Functional Fitness class is 100% good! The instructor is a young fitness educated professor (she even taught Pilates) and the class is seriously like a high school health class. (We learned how to take out pulse and did simple assessments like push-ups and weight circumference yesterday). I found the new building fine and even got there early. Yay! But now I’m sick. I haven’t been sick in years. But my throat and chest are killing me. 🙁 When will it end?! This never ever happens to me. So I am hoping my normal drink gallons of water and tea and use tons of spices remedy will kick it to the curb like it usually does when I feel something coming on. I just hope this doesn’t progress to where I need to go to the doctor (we have to pay to be seen at the health center…). I guess my body is just so unaccustomed to so many people, the city, germs EVERYWHERE! (Even though I am my normal ultra-clean-safe self). Plus, the weather is crap, cloudy, chilly, and rainy 🙁 No good. Life is rough. Now.” – Rebecca

AJIACO COLOMBIANO – Pandemonium Noshery

“The first of many recipes from My Columbian Cooking. I ordered the guascas, the herb required to produces the specific taste, from Amazon. This was another recipe recommended from my friend. I loved the way the guascas flavored the potatoes and the corn. The taste was vaguely familiar, almost a little artichoke like, but not quite. Anyway, you should try it!” – Juli
COLOMBIAN MAZORCA DESGRANADA – Pandemonium Noshery

“It’s Improv Cooking Challenge time and this month the challenge is to create something with Corn and Cheese! The hardest part this month was narrowing down which recipe to cook for this. In the end I decided on a Colombian recipe for a street snack. It’s a quick dish that is full of a lot of flavor and great as a lunch, a snack or delicious side dish.” – Juli
SALPICÓN DE FRUTAS – Pandemonium Noshery

“I love ending a week dedicated to one country with dessert. And this one was fun. And simple. Which is my motto right now, delicious but simple. The soda called for in this recipe is typically Colombiana la nuestra, which I couldn’t find locally. I asked around the internet and the most common said it wasn’t strawberry or cream soda at all, but that was about the closest they would come up with. So I used both of those. And then if you like fruit cocktail, sangria, and floats, or any one of those things, I’m pretty sure you will enjoy this.” – Juli
VEGAN AJIACO (COLOMBIAN POTATO SOUP) – Vegan Huggs

“Vegan Ajiaco is a satisfying, one-pot meal that is made with 3 types of potatoes and served with sliced avocado, capers, and tangy cream. Your taste buds will dance!” – Melissa
traditional colombian pork empanada recipe – Fat Girl Hedonist

“Mother’s day in my home has always been a combination of celebrating the amazing women that made my life possible and celebrating our rich culture. We do this by cooking food from Colombia, like these Colombian pork empanadas. My mother is originally from Nariño, Colombia and my grandmother still lives in Medellin, Colombia. Our family has been using Western Union to send money to my grandmother and aunts for nearly twenty years, so I’m really excited to team up with them on this campaign. Western Union is all about celebrating the little things in life like the good food we eat, the places we visit or the reasons we send money across the world, because it’s these little things that make us who we are.” – Cari
colombian hot chocolate with cheese – Fat Girl Hedonist

“I never realized until I was an adult that drinking Colombian hot chocolate with cheese wasn’t normal. Think hot chocolate in a mug and pieces of soft white cheese melting inside the mug. You scoop the melty cheese out of the cup with a spoon and sip on your hot chocolate. It’s sweet and salty.” – Cari

“I grew up eating Colombian arepas for breakfast, lunch, dinner and snacks. Arepas were a part of my daily life throughout my entire childhood. Whether it was scrambled eggs and a buttered arepa for breakfast or melted cheese on an arepa. There wasn’t a day that passed that I didn’t eat one of these.” – Cari
